Durian ice cream (easy)

Thick, creamy and delicious!
  • 300 g fresh or frozen durian
  • 4 eggs (only the egg yolk is used)
  • 100 g sugar
  • 300 ml double cream
  • 100 g Blenuten® vanilla flavour
  • 300 ml milk or coconut milk without added sugar

Preparation

  • Firstly, separate the egg yolks in a large bowl. Then add sugar to the egg yolks and stir until smooth.
  • Put the durian flesh through a mesh sieve, pressing it with the back of a large spoon. 
  • Heat the cream, milk and Blenuten® to near boiling temperature. Slowly pour the hot cream and milk into the yolk and sugar mixture, and stir.
  • Next, slowly pour the sieved durian pulp mixture into the whipped cream. Stir it quickly for a few seconds with a hand mixer until it's evenly mixed.
  • Pour the mixture into a large, airtight container. Store in the refrigerator overnight.
  • Once the ice cream is completely frozen, store it at room temperature and whisk with an electric hand whisk to disperse and dissolve the ice crystals.
  • Finally, store the ice cream in the freezer until it becomes solid. 10 minutes before serving, take out the ice cream to make it easy to scoop it out. Enjoy!
